Small question, why did you choose translation between English and French is all examples of the course? why not Russian, Chinese, Arabic …etc.?
Not that I have a objection to French or anything 
, I just wanna know would the course contents change in any why if it was different characters like Chinese or a different direction (right to left) like Arabic, or would all the methods you explained be exactly the same if it was any other language than French?

Great question. In theory the decoder should be able to handle other languages as well. To get good performance you may need:
- A good clean data set
- A large compute resource to train the model
- Modifications to the number of layers, dimensions and/or other model hyperparameters
