Hello, I am a first year CS student at EPFL and I would like to make my summer useful ( 1 month). I wanted to start this coursera and then maybe make a project from it ? What do you think ? I would like to gain experience and enhance my CV and resume to land big internships and hopefully get a master at a big school such as Stanford. Thank you !
Which course are you attending?
The ML specialization course
Once you complete that course, you will be able to perform simple projects in regression and classification.
Just being able to claim the completion of the course is a good enhancement to your CV. But it will not land you any internships, as it is a beginner-level course.

Attend more courses in deep learning and generative methods.

Yes.
The usual course sequence is:
- Machine Learning Specialization (beginner level)
- Deep Learning Specialization (intermediate level)
Then branch out into areas where you have particular interests, such as NLP or Generative technologies.
There are also a host of Short Courses which demonstrate various LMM techniques, if you are interested in those.

I cannot say what will help you get an internship.
Increased knowledge is always a good idea.
