Which track depends on your math and programming skills.
If you have none, then start with the “… For Everyone” specializations. Or you can attend some of the Short Courses and see if you enjoy that material.
If you have some Python programming experience, and you understand the equation of a straight line and the probability when rolling one six-sided die, then you have enough background to start with the Machine Learning Specialization.
When I was working on building a project on linear regression during this course, I encountered new topics like data preprocessing, model training, and testing. How should I approach this course to maximize the output I can gain from it?

You have to register for the courses through Coursera.
There’s an “AI for Everyone”, a “Generative AI for Everyone”, for examples.
does the python enough? do i need to acquire other programming language?
All of the Deep Learning.AI courses use Python.
