Converted the Jupyter Notebooks for the Langchain For Application Development short course and the Functions, Tools and Agents with Langchain short course to work with langchain ver 1.2.x and GPT-5-Mini. This is not a line by conversion as number of concepts that were described in these two short courses are deprecated or are no longer best practices with modern (circa 2025) versions of langchain.
