I am tasked to work on creating a medical chatbot for HIV, but I am new to generative AI or LLM and have only taken the first course of the ML specialization. Anyone willing to guide me through this short period? I am a fast learner and dedicated to work on this project.

With due respect, even if you being a fast learner, one cannot respond if we do not know your educational background, skillset and work experience.
Also you are only through one course of Machine Learning specialisation.
To make a chatbot, it is not only generative models or LLM models but many other factors, like do you have understanding of what is prompt, and how it is vectorised and then tokenised for a correlative response to get.
So to understanding all this, you would require to do NLP, but then before that would require to do Deep learning specialisation to basics of sequence models, then as NLP uses tensorflow, you will have to do Tensorflow Specialisations 
So it is a process, you can surely try a short-cut ways of create your own chatbot on ChatGPT but will miss on so many basic understanding about how algorithms are made, how model trainings gets affected, how to import a dataset from pdf, text file or csv.
Then creating a medical chatbot is another topic as you need to have understanding probability and statistical studies.
So more than a guide right now, go with flow and complete the specialisation in hand.
I am not sure if this task is college assignment, then that is again a whole separate level question. But wish you all the best to get a guide

I recently completed my undergraduate studies in biomedical engineering.
I’m learning ML on my own through Coursera courses and YouTube.
About the project, it’s for an internship submission. No specifications are made, but whatever makes a working Chatbot.
